Chicken Bruschetta Flatbread

So the other day I was starving. I hadn’t yet gone on my weekly grocery shopping trip, nor was I planning on making myself look half decent to head out, so I was extremely limited. The few things I had on hand were flatbread, tomatoes, chicken, and basil. So I thought $#@% it, we’re going to have Chicken Bruschetta Flatbread for dinner.

So I marinated my chicken, chopped up my tomatoes and basil, and made a garlic herb rub for the flatbread.

And then 20 minutes later we had utter deliciousness that could be served as a main or an appetizer.

Chicken Bruschetta Flatbread

Ingredients

    For The Chicken:
  • 1 chicken breast
  • 1 tsp olive oil
  • 1 tsp old bay seasoning
  • 1/4 tsp garlic powder
  • salt and black pepper, to taste
  • For The Flatbread:
  • 1 tsp olive oil
  • 1/2 tsp dried basil
  • 2 garlic cloves, smashed
  • 1 roma tomato, diced
  • 4-6 basil leaves, chiffonade
  • salt and black pepper, to taste
  • balsamic glaze
  • freshly grated Parmesan Cheese
  • fresh Feta Cheese
  • Note: Be mindful of the amount of salt you season the chicken with as Old Bay Seasoning contains sodium in it.

Instructions

  1. Combine all chicken ingredients in a mixing bowl. Grill until cooked through. Once fully cooked allow to rest for 5 minutes, then dice into small bite sized pieces.
  2. Preheat oven to 370°.
  3. In a small bowl combine 1 tsp olive oil, dried basil, and garlic cloves. Lightly spread olive oil mixture on flatbread and put in the oven for 10 minutes. Remove after 10 minutes and assemble chicken pieces in an even layer on top of the flat bread. Bake for another 5 minutes.
  4. While the flatbread is baking combine diced tomato, basil, salt and black pepper in a small mixing bowl. Stir to mix well.
  5. Remove flatbread from the oven and evenly distribute tomato mix on top. Drizzle with balsamic glaze. Sprinkle some Feta Cheese on top and grate fresh Parmesan over that. Season with black pepper.
